GIRL TALK

—— It's helpful to use Place Cards for a dinner of 8 or more guests ——-

Today I am featuring comfort food...... Texas Style. Everyone has their own

idea of what "comfort food is"..... but nothing fits the bill better than Mac and

Cheese and a great Meat Loaf. It's good for dinner and the leftovers are terrific!

Gonzales Meat Loaf

makes 6-8 servings2 pounds of ground sirloin

3 large eggs, lightly beaten

1 cup fine, dried bread crumbs

4 garlic cloves, minced

1 medium-sized red onion, chopped

2 plum tomatoes, seeded and chopped

1 1/2 cups ( 6 ounces) shredded Monterey Jack cheese

1/4 to 1/2 cup firmly packed brown sugar

1/2 cup chopped cilantro

1/4 cup Worcestershire sauce

2 tablespoons hot sauce

2 teaspoons salt and one teaspoon pepper

Combine all the ingredients. Shape into a 9x5 inch loaf and place on a

lightly greased wire rack in a baking pan. Bake at 350 degrees for 45 minutes;

increase heat to 425 and bake 15 more minutes or until done. Let the loaf

stand 10 minutes before serving.

AND FOR DESSERT........................

Rancher's Buttermilk Pie

1/2 ounce ( 15 oz.) package refrigerated pie crusts

2 cups sugar

2 Tablespoons cornmeal

5 large eggs, lightly beaten

2/3 cup buttermilk

1/2 cup crushed pineapple, drained

1/2 cup sweetened flaked coconut

1/4 cup butter, melted

2 teaspoons grated lemon rind

2 teaspoons fresh lemon juice

1 teaspoon vanilla extract

Fit piecrust into a 9-inch pie plate according to package directions. Fold

edges under, and crimp.

Combine sugar and cornmeal in a large bowl. Stir in eggs and buttermilk

until combined. Stir in pineapple and next 5 ingredients. Pour filling into

piecrust.

Bake at 350 degrees for 45 minutes or until pie is set and top is lightly

browned. Serve warm, at room temperature, or cover and chill until ready

to serve
