-- WHEW ! IT MUST BE SUMMER! ---
With the temperatures rising and no rain in sight, let's have salads for dinner
and stay away from the heat! Check these salads out and I hope you enjoy!
CONFETTI CHICKEN SALAD ( makes 6 servings )
2 cups mayonnaise
1/4 teaspoon ground red pepper
6 cups chopped cooked chicken
1 cup diced celery
1 cup diced yellow bell pepper
1/2 cup diced water chestnuts
1/2 cup chopped fresh parsley
1/3 cup diced red onion
salt and pepper to taste
Whisk together mayo and ground red pepper in a large bowl.
Stir in chicken and next 5 ingredients. Add salt and pepper.
STRAWBERRY-SPINACH CHICKEN SALAD
1 (6 -oz.) package fresh baby spinach
2 cups sliced strawberries
1 cup diced nectarines
3/4 cup diced English cucumber
1/2 cup sliced red onion
4 cups coarsely chopped grilled chicken breasts
1 (3.5 oz.) package roasted glazed pecan pieces
1 ( 8 oz.) bottle poppy seed dressing
1/2 cup sweetened dried cranberries
1/2 cup crumbled blue cheese
Toss together first 5 ingredients. Top with chopped chicken and
pecan pieces. Stir together poppy seed dressing, cranberries,
and crumbled blue cheese; serve with salad.
APPLE- PEAR SALAD WITH LEMON-POPPY SEED DRESSING
( A vegetable peeler quickly cuts paper- thin slices of Swiss cheese.)
1 (16-oz.) package romaine lettuce, thoroughly washed
1 (6 oz.) block Swiss cheese, shaved
1 cup roasted and salted cashews
1/2 cup sweetened dried cranberries
1 large apple, thinly sliced
1 large pear, thinly sliced
Lemon-Poppy seed Dressing
Toss together first 6 ingredients in a large bowl; serve with dressing.
Makes 6-8 servings.
