—— A SUMMER-TIME HINT FOR THE WISE —— " COOK AS LITTLE AS POSSIBLE" ——-

Most of us own a slow-cooker and if you don't have one, you need to get one!!! They don't heat up your kitchen, they are hardly any trouble, and they provide more than one meal for your efforts. What's not to love??? The following are some examples of what you can do........

1. Toss shredded Slow-cooker Beef Brisket with iceberg lettuce and chopped tomatoes. Serve with sweet-spicy tomato-flavored salad dressing and tortilla chips.

2. Top Honeydew-Orange Toss with vanilla yogurt and stir in chopped nuts for a

healthful breakfast or snack.

3. Spoon shredded beef brisket over long-grain rice to make beef hash.

4. Cut Zesty Pork Roast sliced into strips or cubes, and heat with cooked

stir-fry vegetables ., If desired, serve with Soy Sauce.

5. Cut Zesty Pork Roast sliced into strips, toss with lettuce, drained mandarin

oranges, and slivered toasted almonds or chow mein noodles. Serve with

oil and vinegar or sesame-flavored dressing.

SLOW-COOKER BEEF BRISKET

2 medium onions, thinly sliced

2 garlic ribs, thinly sliced

2 garlic cloves, pressed

1 (2 to 3 lb) beef brisket

2 tsp. salt

1 1/2 tsp. ground chipotle powder

1 cup coarsely chopped fresh cilantro

Flour tortillas

Toppings; shredded Mexican chesses blend, sour cream, salsa, chopped

fresh cilantro

Lime wedges

Place first 3 ingredients in a 6 quart slow cooker.

Trim fat from brisket; cut brisket into 3-inch pieces. Rub pieces evenly with 2 tsp, salt and 1 1/2 tsp. chipotle powder,

and place on top of vegetables in slow cooker. Top with 1 cup cilantro.

Cover and cook on HIGH 6-8 hours or until brisket pieces shred easily with a fork.

Remove brisket from slow cooker; cool slightly. Using 2 forks, shred meat into bite-size pieces.

Serve in flour tortillas with desired toppings and lime wedges. Makes 6 servings

also a cool idea-HONEY-DEW ORANGE TOSS

Makes 6 cups

This recipe calls for Honey-Dew Melons but Cantaloupe is just as refreshing as Watermelon.

1/3 cup fresh lemon juice (about 3 lemons)

1/4 cup powdered sugar

2 Tbsp. fresh lime juice ( 1 lime)

1/2 honey-dew melon, peeled and cut into 1-inch cubes

2 cups navel orange sections ( 2 oranges or 1 can mandarins, drained.)

**** You may also substitute one 11 oz. can of Mandarin oranges, drained, if desired. ****
